Holiday recipes for easter
Here ya go!
-Michael Bacon Horseradish Dip 1 Cup of your favorite REAL mayo 1 Cup Sour Cream 1/4 cup of bacon bits... (in a jar is fine but make sure they're real!) 1/4 cup of prepared horseradish Mix well Cover; Chill. makes 2 cups Great on veggies. Mike's Favorite Lemon Jellyroll Wet 4 eggs separated 1/4 cup sugar 1 tsp vanilla Dry 1 Cup cake flour 1/4 tsp salt 1/2 c. sugar 1 tsp baking powder 1 jar of lemon curd (or your favorite jam) Garnish a couple sprinkles of Powdered sugar and fresh fruit (I like to use Strawberries and Kiwis sliced up) Heat oven to 400F With a mixer, in a large bowl, beat the four egg whites and add 1/4 cup sugar (a TBLS at a time) until foamy and stiff peaks form In a separate bowl beat the 4 egg yolks until thick then stir in 1 tsp vanilla. Fold yolks into the whites in the large bowl until blended. Sift together Cake flour, salt, 1/2 cup sugar, and baking powder Slowly fold the dry ingredients into the eggs Sprinkling about half of the dry mix and folding until saturated then add the second half of the dry ingredients. Just mix until blended you want to keep some fluffiness! Grease a 10x15 jelly roll pan (A cookie sheet with sides) or line with parchment paper or a baking mat) pour batter into pan and bake for approx. 13 min Do a toothpick test in the middle. if it comes out clean or with a couple crumbs it's done. Allow to cool for a couple minutes then invert the cake onto a dishtowel sprinkled with powdered sugar. If the cake doesn't come out right away let it cool a couple more minutes and tap the bottom of the pan. Not too long though.. you still want the cake a little warm to roll. Remove parchment paper if you used it. Spread lemon curd (Or your favorite jam) Leave about 2 inches of one end without jam.. Then gently roll the cake up towards the naked end. Cover with the towel to cool. Decorate by dusting with powdered sugar. I also cut up strawberries and Kiwis just to make it look pretty! Leave Comment: |
